Plug and Play Silicon Valley Summit 2025: Advancing F&B Innovation

From November 18 to 20, 2025, the annual Plug and Play Silicon Valley Summit convened over 300 startups, 75+ expert speakers, corporate executives, and investors, a landmark event spotlighting the transformative power of AI and startup-driven innovation.

Among the featured voices was PIPA’s founder and Director at AIFS, Ilias Tagkopoulos, Ph.D., who delivered a keynote underscoring a central theme: the urgent need to harness AI and advanced data tools to transform the food and beverage (F&B) industry for both people’s health and planetary sustainability.

The F&B sector today faces major global challenges such as hunger, obesity, food waste, excessive land use, and significant greenhouse-gas emissions. At the summit, Tagkopoulos highlighted how AI, when applied thoughtfully across the food system, can help tackle these challenges in ways traditional approaches can’t match. In particular, he emphasized integrating consumer preferences, ingredient science, formulation, and processing to shorten development cycles, reduce variability, and accelerate innovation without compromising sustainability or nutrition.
